[Q] Adjust Layout/UI px on Stock rom?

Hi,

I'm currently running JellyBam, but there are some functionality that I miss from stock-based roms. The main thing that I like about JellyBam is that ParanoidAndroid is included, and that I can use "tablet" versions of apps.

If I switch to a stock-based rom, is it possible to adjust the layout/ui of apps without PA? I know I can adjust the size (DPI) by editing the build.prop, but what I'm asking is different.
