(Q) Help me out with my new n7000 few doubts..

Hello friends
I am new to note1..
I was a xperia s user..
I used to use custom roms...
Here in note I had few confusions...
Like in xperia we have a flshtool for flashing firmwares and kernel...
So how can I flash custom kernels in note??
Plz help..
And suppose I am on miui and I want to return back to stock so..
How can I switch bqck to stock..
Any tool??
I am on latest jb 4.1
And which kernel is best for us...
Is their any oc kernel..
